Sweet Potatoes devine - a great partner dish for grilled Pork or Chicken.
2 large Sweet Potatoes
2 large Red Onions
Ginger powder
Spiced Bliss (or Yassa) Grinder
1 tsp of Sugar (optional)
Juice of 1 lemon
Olive Oil for pan
Smoked Olive Oil to finish
Savoury Salt to taste.
24cm pan with a lid, peeler, lemon squeezer, prep bowl, knife, chopping board, skewer, spatula.
Wash and peel the sweet potatoes - if they are young with perfectly beautiful skin, you don't need to peel them - just give them a really good scrub.
Cut the Sweet Potatoes into regular sized chunks (so they'll cook evenly!)
Peel and cut the 2 Red Onions into petals.
Warm a little cooking olive oil in the pan and ligtly fry the Sweet Potato chunks until just golden, turning them a few times so all sides get a turn on the frying-side (they won't be cooked through yet!)
Add the Onion Petals and shake them around a bit - fry 1 minute more.
Add some Savoury salt to taste, a generous sprinkling of Ginger Powder, a generous grinding of Spice Bliss (Yassa) and Sugar (optional). Fry for another minute.
Add the Lemon Juice and about 30ml water.
Quickly put on the lid, turn the heat to its lowest and let it steam for 5 minutes.
With a skewer, check that the Sweet Potatoes are tender - if not, return to the heat for another minute or two.
Just before serving, drizzle over some Smoked Olive Oil - it will instantly lift the dish from delicious to awesome!
The real magic (apart from the Smoked Olive Oil at the end) comes from the couple of minutes the dish 'steams' on really low heat. If you're cooking on gas, turn the plate to its lowest setting; if you're on a spiral stove-top, give it 2 minutes on lowest heat, then turn the plate off; on a solid plate stove, turn the plate off - there will be enough residual heat to finish cooking.
