WHAT'S IN IT...

Ingredients: Vintage (50%) (chillies: Serrano &/ Passion Chilli (48%), vinegar, salt), lemon juice, water, sunflower oil, fermented Serrano chilli (12%), garlic, salt, Bird’s eye chilli (0.3%), thickener: xanthan gum.

Nutrition: Average quantity per 100g. Energy 541kJ / 129kcal, Protein 0.8g, Carbohydrates 16.8g of which sugars 2g, Total Fat 6.9g of which Saturated Fat 0.78g, Fibre 2g, Sodium 488mg (equal to 1.2g Salt).

Fermented Hot Drops is a perfect boost for seafood pasta.

Pro-Tip: To create pops of flavour interest, the trick is to divide the seafood roughly in half. Add a few drips of Fermented Hot Drops to one half and a few drops of lemon juice (with a light sprinkle of salt), to the other half. Then, just before serving, mix the seafood and then mix it into the pasta.

Serve hot with a bottle of Fermented Hot Drops on the side.

And sometimes, all you need is the comfort of a BIG bowl of sun-ripe tomato sauce (with Fermented Hot Drops of course), stuffed with seafood, on hot spaghetti...

FATTOUSH

Cut ±300g stale Turkish Flat Breads into bite-sized chunks, and put in a large bowl.

Mix together 3tbs chopped mint; 3tbs white wine vinegar; 3tbs lemon juice; 1tsp salt; 80ml olive oil; 2 cloves of garlic crushed; 4tbs chopped flat leafed parsley; 1tbs sumac.

Prepare the fresh stuff: ±400g ripe, small plum tomatoes, cut into chunks . ±300g of small (snack) cucumbers, sliced. 2 Spring Onions (or young red onions), sliced finely. ±120g small radishes, sliced or quartered. (Some people prefer to serve the radishes on the side - not everyone likes radishes!)

Combine all the chopped fresh bits and stir through 20ml Fermented Chilli Hot Drops.

Place the bread along the outer edge of a serving platter. Spoon the mixed fresh bits onto the platter and dress with the herb mix.

Sprinkle with a little extra olive oil and some pomegranate jewels.
